I try not to count calories or weigh my food because I think it creates an unhealthy relationship with food and can lead to obsessive or disordered eating. I don't plan on competing in any shows, so I really don't see the need to make it overly complicated.
I do have a few things that I adhere to strictly, except on special occasions. I don't eat sugar, drink anything but green or black tea, milk, protein shakes/supplements and water.
I stay away from most processed foods and eat as close to nature as possible. I try my best to stick veggies into whatever I'm eating...And I always try to buy organic fruits and veggies and free range, veggie fed meat.
My main Veggies of choice: sweet potatoes, spinach, green/red sweet peppers, tomatoes, and I've recently found a beet recipe that I love! I also try to add other veggies that are in season to my recipes (like squash).
Fruits: I try to have about 2 a day -> usually organic apples, some frozen berries, a kiwi or a mango....I don't ever drink fruit juices anymore. When I used to, I drank unsweetened pure fruit juice (with no additives).
The less sugar and processed foods you eat, the less you crave it! When I do crave it, I have sugar free dark chocolate or a protein shake. My vice is buttery popcorn YUM! The trick to sticking to a healthy diet is by not "feeling" deprived.
Dairy products: I've been asked a few times if I exclude dairy from my diet, and my response "No way!" I love dairy products. I try to use fat free or low fat...I keep my cheese and butter consumption low but I would never exclude them completely. I eat 1/2 cup of fat free cottage cheese on some nights before bed and I drink at least 1 glass of milk per day.
My daily supplements are:
Vitamin E and C (especially if someone I know is sick)
Digestive Enzymes (for better digestion and absorption of foods)
